Amalfi Pasta

Serves 4

Ingredients

  • 350 to 400g linguine, spaghetti or tagliatelle – we want long pasta for this.
  • 2 large lemons, scrubbed
  • 4 tbsp olive oil or butter
  • 1 garlic clove
  • 4 tbsp Parmesan or other hard cheese (vegan alt – use chopped nuts)
  • Salt and pepper
  • Parsley

Method

Heat a large pan full of water, add salt and when boiling add the pasta. Stir well and let it cook for 7 to 8 minutes or until it is done how you like.
Use a box grater to finely grate the garlic clove and the zest of the lemons.

Heat the oil or butter gently in a large shallow pan, then add garlic and lemon zest. Keep an eye on it – garlic burns quickly.

Once the pasta is done, drain but keep back some of the starchy water. Add the pasta to the lemon and garlic, plus a few sloshes of the pasta water to make a creamy sauce. If using, add the cheese and the juice of the lemons. Add pepper and salt as needed. Keep tossing the pasta until it is all coated with the sauce. Serve with chopped parsley and nuts if using. Eat!
