Balkan Vegetable Stew

Ingredients

  • Olive oil (NOT extra virgin)
  • 3 aubergines
  • 1 large red pepper
  • 1 large green pepper
  • 1 large or 2 smaller onions
  • 4 garlic cloves
  • 1 ½ tsp ground coriander
  • 1 ½ tsp ground cumin
  • 1 ½ tbsp tomato puree
  • 300g ripe tomatoes
  • 400g can chopped tomatoes
  • 1 tsp sugar
  • Salt and pepper
  • Green herbs – coriander, parsley or basil.
