Potato Champ

Serves 4

Ingredients

  • 750g floury potatoes – ask Paul
  • Bunch of spring onions
  • 300ml milk
  • 50g butter
  • Salt and pepper

Method

Peel potatoes (or scrub clean) and cut into large even chunks. Cook in boiling salted water for 15 to 20 minutes or until a knife goes in easily. Drain well.

Meanwhile, slice the spring onions thinly, greens and all. Add to a small pan with the milk and bring to a boil. Cook for two minutes, then switch off and leave to sit for 10 minutes.

Mash the potatoes and beat in the milk and spring onions. Add the butter and season.

Serve with more butter and shredded cheese if liked.
