Stroganov veggie style

Serves 2-3

Ingredients

  • 400g mushrooms
  • 1 large onion
  • 2 tsp oil
  • 2 garlic cloves
  • 1 tbsp paprika
  • 1 tbsp flour
  • 150ml veg stock
  • Lemon juice
  • 3 tbsp sour cream
  • 3 tbsp chopped tarragon, dill or parsley.

Method

Slice the onion thinly and cook gently in the oil until soft and translucent. This can take longer than you think but don’t rush it. Add the garlic cloves, chopped with a. sprinkling of salt. Slice the mushrooms and add to the pan. Stir well and cook over low heat for 5 or so minutes. Add the flour and paprika. Stir to prevent any lumps forming and cook for another minute. Stir in the veg stock. Bring to a gentle simmer and let it cook until the sauce is thickened. Use lemon juice, sour cream and herbs to taste. Serve with rice.
